Barbecued pork buns

Ingredients

For the filling:

300 grams pork

50 grams barbecue sauce

1 tablespoon oyster sauce

1 tablespoon soy sauce

1 tablespoon cooking wine

1 tablespoon honey

1 piece ginger, sliced

2 garlic cloves, sliced

1 tablespoon starch

2 tablespoons vegetable oil

For the dough:

400 grams all purpose flour

7 grams yeast

7 grams baking powder

70 grams white sugar

Method

1. Chop the pork

 

2. Pour oyster sauce, soy sauce, barbecue sauce, cooking wine, and honey in a bowl, mix until even

 

3. Heat a skillet over low heat, pour vegetable oil in the skillet, heat the oil until shimmering, drop the ginger and garlic in the skillet, stir until fragrant

 

4. Pour the chopped pork in the skillet, stir until the color is changed

 

5. Pour the mixed sauce in the skillet, stir until even

 

6. Pour some water in the skillet, until the pork is fully submerged, turn up to high heat, bring to a boil, turn down to low heat, cover the skillet with the lid, stew for 30 minutes, until cooked through

 

7. Mix the starch with a tablespoon of water, pour in the skillet, stir until even, turn off the heat, set aside

 

8. Pour all ingredients for the dough in a large mixing bowl, pour some water in the bowl, mix until even, knead the dough until smooth and elastic, cover the bowl with plastic wrap, set aside to rest for 15 minutes

 

9. Roll down the dough into a rectangle, fold the rectangle, roll down again, repeat for 3 times

 

10. Roll up the rectangle into a rope

 

11. Divide the rope into 14 equal pieces, roll each piece into a ball

 

12. Roll down each ball into a thin and round crust, put some fillings in the center of each crust

 

13. Fold and pinch each crust into a 3 pointed star

 

14. Press the center with the thumb of your left hand, pull the 3 points toward the center

 

15. Press the 3 points on the center

 

16. Pinch the points until firmed

 

17. Line the steamer with parchment paper, put the buns in the steamer, cover the steamer with the lid, let the buns to rise for 50 minutes

 

18. Steam the buns for 15 minutes, turn off the heat, simmer for 5 minutes

 

19. Take out the buns, done
