Simmered chicken with yam

Ingredients

1 chicken

1 piece iron stick yam

1 green pepper

2 red chilies

5 garlic cloves

1 black cardamom

1/2 teaspoon black pepper

1 piece ginger

1 scallion

2 tablespoons vegetable oil

1 teaspoon salt

1/2 teaspoon chicken powder

1 tablespoon cooking wine

Method

1. Cut the chicken into chunks, blanch the chicken in boiling water for 3 minutes, take out, rinse with cold water, drain

 

2. Peel and slice the yam into chunks

 

3. Blanch the yam in boiling water for 2 minutes, take out, rinse with cold water

 

4. Slice the scallion and ginger

 

5. Dice the green pepper, slice the red chilies on the bias

 

6. Heat a skillet over high heat, pour vegetable oil in the skillet, heat the oil until shimmering, add the ginger, black peppers, and black cardamom in the skillet, stir until fragrant

 

7. Add the chicken in the skillet, stir until even, pour cooking wine in the skillet, stir until even

 

8. Pour some water in the skillet, simmer for about 5 minutes, until mostly cooked

 

9. Drop the yam in the skillet, stir until even, season with salt

 

10. Stir for about 3 minutes

 

11. Add the green pepper, red chilies, and garlic cloves in the skillet, stir until fragrant

 

12. Drop the scallion in the skillet, stir until fragrant, season with chicken powder

 

13. Stir for about 2 minutes, until thoroughly cooked

 

14. Serve
