Steamed egg custard with whitebait

Ingredients

50 grams whitebait

3 eggs

1 tablespoon vegetable oil

1/2 tablespoon cooking wine

1/2 teaspoon salt

1/2 teaspoon mixed spice

1 tablespoon seasoned soy sauce

Method

1. Rinse the whitebait, drain, pour the whitebait in a bowl, pour some salt, cooking wine, and mixed spice in the bowl, mix until even, set aside

 

2. Crack the eggs in another bowl, beat until even, pour 3/4 cup warm water in the bowl, mix until even

 

3. Filter the beaten egg in another bowl, pour half of whitebait and some salt in the bowl, mix until even

 

4. Cover the bowl with plastic wrap, put the bowl in the steamer to steam for 6 minutes, take out the bowl, remove the plastic wrap, put the remaining whitebait in the bowl, cover the bowl with plastic wrap, put the bowl in the steamer to steam for 6 minutes

 

5. Take out the bowl, remove the plastic wrap, sprinkle the seasoned soy sauce and vegetable oil in the bowl, done
