Sauteed fish flavored eggplant sticks

Ingredients

1 eggplant

1 bell pepper

1 green onion

1 piece ginger

2 garlic cloves

1 tablespoon baked bean sauce

1/2 tablespoon vinegar

1/2 tablespoon soy sauce

1/2 tablespoon white sugar

1/2 tablespoon starch, mixed with 1 tablespoon of water

3 tablespoons vegetable oil

1 teaspoon salt

Method

1. Rinse the eggplant, cut into sticks, sprinkle the eggplant sticks with salt, mix until coated, set aside for 10 minutes

 

2. Remove the seeds from the bell pepper, trim the bell pepper, slice the bell pepper, chop the ginger, green onion, and garlic cloves

 

3. Squeeze the eggplant sticks to remove excess water

 

4. Heat a skillet over high heat, pour vegetable oil in the skillet, pour the ginger, green onion, and garlic in the skillet, stir until fragrant

 

5. Pour baked bean sauce in the skillet, stir until fragrant

 

6. Drop the eggplant in the skillet, stir until even

 

7. Drop the bell pepper in the skillet, stir until cooked through

 

8. Pour vinegar in the skillet, stir until even

 

9. Pour soy sauce in the skillet, stir until even

 

10. Pour white sugar in the skillet, stir for 3 minutes

 

11. Pour starch water in the skillet

 

12. Stir until even

 

13. Serve
