Braised sea bass with pickled greens

Ingredients

1 sea bass

200 grams pickled green

3 pickled red chilies

5 garlic cloves

1 piece pickled turnip

1 piece ginger

1 tablespoon cooking wine

1/2 teaspoon ground black pepper

1 teaspoon salt

1 teaspoon starch

1 tablespoon seasoned soy sauce

5 dried red chilies, sliced

3 tablespoons vegetable oil

Method

1. Remove guts and scales from the fish, remove fish head and fish tail from the fish, separate the fish steak from the fish fillet, slice the fish steak and fish fillet, rinse, drain

 

2. Drop the fish steak in a large bowl, pour some cooking wine and ground black pepper in the bowl, mix until even, set aside for 10 minutes

 

3. Drop the fish fillet in another bowl, pour the remaining cooking wine, ground black pepper, and starch in the bowl, mix until even, set aside for 10 minutes

 

4. Chop the pickled greens, slice the pickled turnip, pickled red chilies, ginger, and garlic cloves

 

5. Heat a skillet over high heat, pour some vegetable oil in the skillet, pour the pickled red chilies, pickled turnip, ginger, and garlic in the skillet, stir until fragrant

 

6. Drop the pickled greens in the skillet, stir until fragrant

 

7. Push the pickled greens mixture to the sides, put the fish head and fish tail in the skillet, fry until golden, pour some hot water in the skillet

 

8. Bring to a boil, drop the fish steak in the skillet

 

9. Pour seasoned soy sauce in the skillet

 

10. Pour ground black pepper in the skillet

 

11. Season with salt

 

12. Boil for about 5 minutes, until thoroughly cooked

 

13. Take out the fish steak and pickled greens mixture, put in a bowl, leave the soup in the skillet

 

14. Drop the fish fillet in the skillet, boil for 3 minutes, until thoroughly cooked, pour the all ingredients to the bowl

 

15. Heat another skillet over low heat, pour some vegetable oil in the skillet, drop the dried red chilies in the skillet, heat the oil until shimmering, pour the vegetable oil and red chilies on the fish
