Sauteed swamp eel slices


500 grams swamp eel

1/4 cup vegetable oil

1/2 teaspoon salt

2 tablespoons cooking wine

2 tablespoons sliced green onion

2 tablespoon chopped ginger

2 tablespoon minced garlic

1 teaspoon sesame oil

2 tablespoons soy sauce

1 tablespoon white sugar

1 tablespoon starch


1. Remove the head and guts from the swamp eel, slice the swamp eel


2. Immerse the swamp eel in boiling water for 1 minute


3. Take out the swamp eel, rinse, drain


4. Heat a fry pan over high heat, pour some vegetable oil in the fry pan, heat the oil until shimmering, add some ginger, garlic, and green onions in the fry pan, stir until fragrant, add the swamp eel in the fry pan


5. Add cooking wine in the fry pan, stir for 30 seconds


6. Pour some water in the fry pan, add soy sauce, white sugar, and some salt in the fry pan, stir until even, bring to a boil, turn down to low heat, stew for 10 minutes


7. Mix the starch with 1 tablespoon of water, pour the starch mixture in the fry pan, turn up to high heat to thicken


8. Pour the swamp eel mixture in a dish


9. Top the swamp eel with the remaining green onions, ginger, and garlic, heat the remaining vegetable oil until almost smoking, sprinkle the spices with the vegetable oil, sprinkle the spices with sesame oil


10. Done
