Stewed pork trotter in beer


2 pork trotters, chopped

1 can beer

3 star anise

1 teaspoon salt

3 bay leaves

1 cinnamon stick

1 piece scallion

1 piece ginger, sliced

1 teaspoon cumin

3 dried red chilies

1 tablespoon soy sauce

20 grams crystal white sugar

2 tablespoon vegetable oil

2 tablespoons cooking wine


1. Fill a cheesecloth bag with star anise, cumin, and bay leaves, seal the bag with kitchen twine


2. Pour some cold water in a stew pan, add the pork trotters in the stew pan, add some cooking wine in the stew pan, heat the stew pan over high heat, bring to a boil, remove the scums, boil for 5 minutes


3. Take out the pork trotters, rinse, drain


4. Heat a skillet over high heat, pour vegetable oil in the skillet, heat the oil until shimmering, add the crystal white sugar, scallion, ginger, dried red chilies, and pork trotters in the skillet


5. Stir until the crystal white sugar is melted, add soy sauce and cooking wine in the skillet, stir until even


6. Pour the beer in the skillet, add some water in the skillet, until the pork trotters are fully submerged


7. Bring to a boil


8. Pour all the ingredients in a stew pan, add the cheesecloth bag in the stew pan, cover the stew pan with the lid


9. Heat the stew pan over low heat, stew for 90 minutes


10. Remove the ginger, scallion, and cheesecloth bag from the stew pan, season with salt


11. Turn up to high heat to thicken


12. Once thickened, serve
