Pulled eggplant salad


2 eggplants

5 garlic cloves

1 small bunch parsley

1 tablespoon sesame oil

3 tablespoons vinegar

1 small bunch green onion

2 tablespoons soy sauce

1/2 teaspoon salt

1/2 teaspoon white sugar


1. Trim the eggplants, put the eggplants in the steamer, steam for 10 minutes, until cooked through


2. Take out the eggplants, set aside


3. Mince the garlic, put the garlic in a bowl, add some salt in the bowl


4. Slice the parsley and green onions


5. Add the green onions in the bowl, add soy sauce, vinegar, and sesame oil in the bowl


6. Add white sugar in the bowl, mix until even, set aside


7. Shred manually the eggplants, lay the eggplants in a dish


8. Top the eggplants with the parsley, pour the eggplants with the mixed sauce
