Stewed lamb spine

Ingredients

2500 grams lamb spine

1 scallion

1 piece ginger, sliced

1 tablespoon black pepper

2 tablespoons cooking wine

1/2 teaspoon ground black pepper

1/2 teaspoon salt

1 small bunch parsley, sliced

1 teaspoon wolf berry

Method

1. Rinse the lamb spine

 

2. Immerse the lamb spine in water for a night

 

3. Chop the lamb spine into large chunks

 

4. Drop the lamb spine in a stew pan, pour cooking wine and some water in the stew pan

 

5. Heat the stew pan over high heat, bring to a boil, turn down to low heat, boil for 5 minutes

 

6. Take out the lamb spine, rinse

 

7. Fill a cheesecloth bag with the black peppers, seal the bag with kitchen twine until firmed

 

8. Rinse the stew pan, drop the lamb spine in the stew pan, add scallion, ginger, the cheesecloth bag, and some water in the stew pan

 

9. Cover the stew pan with the lid, heat the stew pan over high heat, bring to a boil, turn down to low heat, stew for 2 hours

 

10. Turn off the heat

 

11. Serve, sprinkle the soup with salt, ground black pepper, green onion, and parsley
